Make meatballs.



  • 1 pound ground beef (80/​20)

  • 1/​2 pound ground pork

  • 1/​2 pound ground veal

  • 2 eggs

  • 2 cloves garlic, minced

  • 1/​2 cup parmesan cheese, grated

  • 1 teaspoon salt

  • 1/​2 teaspoon pepper

  • 1/​4 cup parsley, finely chopped

  • 1/2 cup seasoned breadcrumbs

  • 1/​2 cup water

  • salt and grated Parmesan to garnish


Heat oven on broil.

Line a baking sheet with parchment paper.

In a large bowl mix all ingredients except breadcrumbs and water.

Pour breadcrumbs on top of mixture and dampen with water. Move breadcrumbs around with your hands to make sure all crumbs are moist. Use a little more water if needed.

Roll meat into balls a little larger than a golf ball.

Place 12 meatballs on a sheet.

Broil first side for 10-15 minutes or until brown. Take meatballs out of the oven and flip.

Broil second side. Watch carefully and remove when brown (about 2-5 minutes).

As soon as you remove meatballs from the oven, sprinkle with salt and Parmesan cheese.

Serve immediately.

Yield: About 24 meatballs

Cook’s Notes:

1. Sometimes its hard to find ground veal or even ground pork. You can substitute 2 lbs. Meatloaf Mix in place of all the meat listed above.

2. Serve these meatballs straight out of the oven, or simmer them (for about 2 hours) in your favorite tomato sauce.

3. Consider making a double batch of meatball mix and use the extra for wedding soup.
